Shanghai is one thing I love to prepare for some occasion. Its because its easy and all in one recipe. Aside from that not that expensive as well for the menu that I' am sure will be love by your kids! So here is how to make it and make a try!






Ingredients That You Need :

3 tbsps. cooking oil
2 tbsps. minced garlic
5 cups cooked rice
3 eggs, well beaten 1/2 cup green peas 
1/2 cup chopped carrots
1/2 cup soy sauce

Here's how to make it:


1. In a pan, heat oil and saute the garlic

2. Add the cooked rice, followed by the soy sauce. Mix well.

3. Make a well in the middle of the rice and pour in the eggs. Allow the egg to cook for 2 minutes, before stirring the rice mixture a new.

4. Add in the green peas and carrots. mix well then rap with shanghai wrapper and fry.

5. Once golden brown its cook already and serve hot!

VEGETARIAN PAELLA




Christmas is approaching maybe your thinking of what yummy and health food you can prepare for you family. Okay we know that during this holiday we really gain some pounds due to much party and foods of course. Lets be wise in choosing a good recipe and also healthy. Not just meat then chicken prepare this one and I' am sure you'll have a healthy holiday!






Here's What You Need :

1/4 cup olive oil
11/4 cups long-peeled and sliced
2 large garlic cloves, crush
1 pinch saffron strands
3 cup light vegetables stock
1/2 lemon, slice
salt
1 tbsp fresh ground black pepper
1 lb washed and trimmed leeks cut into 1-inch lengths
1/4 cup frozen  peas
1/4 cup black olives or more
1 parsley, chopped


Here's How To Make It:


1. Heat the oil in a large, deep pan. Add the long-grain brown rice and onion slices and stir until the rice is coated and begins to turn opaque.

2. Add the garlic, saffron, stock or water, lemon rind and salt and pepper. Mix well, then bring to a boil. Mix again, to distribute the saffron coloring.

3. Arrange the vegetables and olives attractively on top of the rice. Bring to a boil. Cover with a lid or foil and simmer for 45 minutes.

4. Sprinkle with parsley and serve straight from the pan!

TORTANG TAGALOG







Torta means fried in English Talong is know as Eggplant. Although Nutritionist never find any nutrients in this vegetable still its one I love and we prepare for Dinner or Lunch with egg. So its up to you if you going to try it but I know many love this one, why not make a try as its just easy to prepare and good for the budget as well. 




Here's What You Need:

2 Talong ( Eggplang) 
2 egg beaten
salt, pepper to taste
tomato, cilantro or kinchay to garnish


Here's How To Make It:


1. Roast the eggplant, either in the oven or over gas flame (latter is preferable) until the outside skin is charred. Peel off the skin and mash the flesh with a fork. Make sure to keep the whole thing as intact as possible. 

2. In a skillet, fry the onion until translucent and remove. To prepare one torta, beat an egg in a bowl, then dip the eggplant. Hold the whole thing by the stem and don't dip that part in the egg. Add salt and pepper to taste, add finely  chopped cilantro or kinchay to the egg mixture. Just repeat for the other one eggplant.

3. Heat oil in a frying pan, then when the oil is hot, add the mixture to the pan and layer some onion to the top of it. Let it set then turn over with a spatula. Remove and place in a plate then garnish with tomato slices an cilantro/kinchay. Serve with rice and happy eating !

Monggo








Monggo is one of the budget menu I love will I' am still younger at the age of 29 yeah I' am just young as that, yet to those who are in 70 with  Arthritis this menu is not for them. Beans is No! No! for those who have that health problem as it will make the pain worst. Its a budget type recipe mostly Filipino love it but some don't of course not all as I have a close friend who don't eat Monggo. Yet mostly they love this recipe! 









Here's What You Need :


1 cup whole monggo ( mung ) beans
5 tablespoons vegetable oil
7 cloves garlic, lightly mashed
2 medium-sized onions, chopped
3/4 lb red-ripe tomatoes, shopped
1/2 lb malunggay leaves
1 tsp salt to taste
q tbsp calamansi or lime juice


Here's How To Make It:

1. Saute garlic in the vegetable oil until light brown. Add onions, fry until translucent. Ass tomatoes, stir for 5-6 minutes.

2. Add cooked monggo beans and bring to a simmer. Simmer with occasional stirring for 5 minutes.

3. Add malunggay leaves, salt and 1 tbsp calamansi juice. Stir and simmer. Simmer with occasional stirring, 5 minutes or until leaves are done.

MISUA AT SAYOTE









Its easy to prepare actually this one is very affordable and very cheap in a budget. We used to prepare it when we really out of money specially when those time that my salary is not enough or would say we need to tighten our belt. So, this one is we prepare for dinner or lunch. Easy to cook and healthy as well. Make a try I' am sure you can save a lot !




Okay lets start, Here's What You Need :

Misua ( around 2 bundles will do )
1/2 onion, finely sliced into half-moons
2-3 cloves of garlic, finely chopped
equal amount of ginger,cut in small matchsticks
sayote around 2 pieces


Here's How to Make It:

1. Saute the garlic in oil then add onion and ginger. When onion turns translucent, add the stock or water along with salt or patis and pepper to taste. Bring to boil.

2. Add the sayote ( cut in 1 in squares or to your liking ) and simmer soup until sayote is tender.

3. Add the misua and stir, being careful not to let the misua get stuck to each other ( otherwise you get a nice sticky ricey mess ). Allow to sit for a couple of minutes.

Ukoy Recipe



Ukoy is one of know here in the Philippines because its so cheap and budget type. I love it as its easy and very simple to prepare. Actually, the ingredients is so cheap but the taste is really good. Here's how to make it hope you able to try now!








Here's How To Make It :

1 cup bean sprouts
a few dried boiled shrimps
1 tsp salt
1 cup shrimps liquor ( shrimps juice from mashing shrimps by mortar and pestle or by food processor
1 cup corn starch or rice flour
1 onion, chopped
achuete seeds
2 eggs, well beaten
oil for frying
vinegar, pepper, garlic and salt

Here's how to make it:

1. Dissolve corn starch or rice flour in about 1/4 cup water
    with achuete for coloring

2. Mix thoroughly starch-mixture, then add salt, shrimp liquor, onion and well-beaten egg until a smooth batter is obtain.

3. Add bean sprouts. Heat oil in a deep frying pan and pour about 1/4 cup of the batter at a time. Gather all particles together and lay pieces of boiled shrimps on the surface.

4. Fry until golden brown. Drain and serve with vinegar-garlic sauce.

GINATAANG KALABASA




GINATAANG KALABASA is a healthy food you should prepare for you family. Squash or Kalabasa in tagalog is good for the eyes as it have a vitamin A. Not just that it have more minerals that good for your health and of course a great for diet. In our province we used to plant squash in our yard that is why cooking it is such so easy for me. So, make a try of this yummy Recipe for you family! 






HERE'S WHAT YOU NEED:

1 kilo squash, cut into cubes
1/4 kilo shrimps, shelled 
3 piece tomatoes, diced
2 onions, chopped
1 head garlic, minced
2 tablespoon of ginger root, crushed and minced
4 tablespoons of shrimp paste ( bagoong )
2 cups coconut milk
1 cups coconut cream ( kakang gata )
2 cups chicken stock
2 tablespoons of fish sauce ( patis )


Here's How To Make It:

1. On a big pan, heal oil. Saute garlic, onions until light brown then add ginger, cook until onion become translucent. 

2. Add the tomatoes, squash, chicken stock, shrimps paste and the coconut milk. Let boil then simmer for 10 to 15 minutes or until the liquid has reduced and the squash become tender.

3. Add the coconut cream, long chili peppers and the shrimps. Bring again to a boil and simmer for a few more minutes. Serve hot with plain rice.

POTATO-CARROT SOUP









Because its raining sue to typhoon Ruby, this recipe is one thing that I highly recommend for you to prepare because to reduce the cold you feel. This one I' am sure you will love as I love it as well. Simple and not that expensive then so easy to prepare, why not try it and make our family happy with you new recipe in the table. Here's what you need:

1/4 cup butter
2 chicken bouillon cubes
3 cup raw potatoes
1 tsp. celery salt to taste
1 1/3 cup evaporated milk
1 tbsp. flour 
1 medium onion, chopped 
3 cup boiling water
3 carrots, diced
1/4 tsp. pepper
1 bay leaf
salt, if needed to taste
2/3 cup water


Here's How To Make It:

1. Melt butter in a large saucepan, add onion and saute until browned.

2. Dissolve bouillon cubes in 3 cups of boiling water. Add to the onions along with the potatoes and carrots.

3. Add bay leaf, salt, celery and pepper to taste.

4. Simmer over low heat until potatoes are tender. Stir in evaporated milk.

5. Blend 2/3 cup water with flour; stir into soup. Heat and stir until slightly thickened.

CREAMY VEGETABLE LASAGNA

This recipe is good for special occasion, you can prepare this one for Birthday, anniversary or this coming Christmas. Enjoy it and make a try then empress your family and love one!



Ingredients;

2 cups of carrots, thinly sliced
2 cups of mushrooms, sliced
1 cup of Zucchini, finely chopped
1 teaspoon of oregano
1 teaspoon of basil
12 lasagna noddles
1/2 cup of all-purpose flour
10 ounces of frozen and thawed spinach
2 cups of milk
1 cup of Parmesan cheese
1 cup of ricotta cheese
1 cup of cottage cheese
3 cups of shredded mozzarella cheese
salt and pepper
Fresh parsley

Here's How To Make It:

1. Preheat oven to 375 degrees F

2. Grease a 9x13-inch baking dish

3. Bring a large pot of water to boil. Add the noddles and cook for 7 to 10 minutes until noodles are al dente. Drain noodles and set aside.

4. Heat olive oil in a skillet. Add garlic and onions, then the carrots, mushrooms, and zucchini. Saute for five minutes.

5. In a medium saucepan, whisk flour and milk together.Cook mixture until thick, stirring constantly. Cook to boiling. Add pepper and salt to taste. Stir in 1/2 cup of Parmesan Cheese, then thawed spinach. Remove from heat.

6. In a bowl, combine the ricotta cheese and cottage cheese. Place three drain noddles in a pan to form a layer. Top with the spinach mixture, then add layer of cheese mixture followed by vegetables and mozzarella cheese.

7. Place three more noddles and repeat process. End with a layer of noddles. Top with Parmesan cheese.

8. Baked for 35 to 40 minutes or until top is brown. Sprinkle with fresh parsley and remove pan from oven and serve.

CHOPSUEY







This Recipe is one thing I love because its healthy and actually have more vegetables. This is really good for those who are vegetarian but you can add of course pork if you like. A good and healthy food for you family, a mother love to prepare of course to keep the family in good health. Ingredients;

1/4 kilo pork, sliced into small pieces
1/4 kilo shrimps, shelled remove
1/4 kilo chicken liver and gizzard, sliced to small pieces
1/4 kilo cauliflower, broken to bite size
1/4 kilo string beans
1/4 kilo snow peas ( sitsaro ) 
1/4 kilo cabbage, cut into squares
3 stalk celery, cut into 2" long pieces
2 stalk of leeks, cut into 2" long pieces
5 cloves garlic, diced
2 onions, diced
1 carrot, sliced thinly
1 piece red bell pepper, cut into strips
1 green bell pepper, cut into strips
2 tablespoon of cornstarch, dissolve in 1/4 cup of water
2 cups chicken stock ( broth )
3 tablespoon of patis ( fish sauce )
4 tablespoons of corn oil or vegetable oil
salt to taste

Here's How To Make It:

1. In a big pan or wok, saute garlic, onions then add in the pork, chicken liver and  gizzard. Add 1 cup of stock, pinch of salt and simmer for 15 minutes or until pork and chicken giblets are cooked.

2. Mix in the shrimps then add all the vegetables. Add the remaining 1 cup of stock, patis, and the dissolved cornstarch. Cook for about 10 minutes or until the vegetables are done. Add the sesame oil. 

3. Salt and pepper to taste. Then serve hot with plain rice!

Bicol express is one Recipe I love Since I' am a Bicolana. Yeah I was Born in Bulan and actually grow up there until I finish my Degree in BS Entrepreneurship. As of now I' am working here in Manila but still my heart belong to my Home town. Bicol Express is the pride of Bicol a menu we are proud to represent our province. Actually now a day it is already known all over the Philippines and prepare in Different style but of course the Bird's eye Chili is one thing that its always Ingredients.  Below is the recipe of My late mother who I always love to taste. I hope you enjoy it and love it as well.

Ingredients:


1/4 kilo pork, thinly sliced

1 cup Sitaw

3 cups long chili or Birds Eye

1 onion, minced

1 head garlic, minced

1 cup coconut milk

1 cup coconut cream

2 tablespoon of cooking oil

salt to taste

Here's How To Make it:

1. In a bowl of water with salt, soak chili pepper for 30 minutes then rinse and strain.

2. In a cooking pan, heat cooking oil and brown sliced pork for a few minutes.

3. In another pan, saute minced garlic and onion.

4. Add to the saute the brown pork. Then add the coconut milk, bring to a boil and simmer for 10 minutes.

5. Add the chili peppers, Sitaw and cook until dish gets a little dry.

6. Add the coconut cream and simmer until the sauce thickens, then add salt and serve with white rice.

Ubod Atchara









Here's what you need:

1/4 fresh heart of palm (ubod)
1 medium carrot peeled and cut into strips
1 small red bell pepper slice into strips
1 finger chili
1 cup white vinegar
1 cup sugar
1tsp salt
5 native onions sliced thinly
5 cloves garlic
1 tbsp ginger

Here's How :

1. Cut fresh ubod into uniform thin strips

2. Prepare carrots, red bell pepper and finger chili

3. Combine ubod , carrots red bell pepper and chili.

4. In a sauce pan heat  vinegar and sugar stirring constantly until sugar is dissolve.

5. Add salt, onion, garlic and ginger. turn off  heat.

6. Pour hot mixture of the ubod mixture, toss.

7. Transfer mixture into sterilized bottle.

Chicken Lasangna





Ingredients :

2 tbsps Vegetable oil
2 tbsps Butter
4-5 cloves garlic, minced
1 Large onion, chopped
4-5 stalks celery, chopped
1 carrot, peeled and chopped
½ kilo groud chicken
1 chicken cubes
½ cup water
   Salt and pepper to taste
1 tbsp patis

Procedure:

1. In a large wok or fraying pan heat cooking oil and butter, saute garlic and onions until soft.
2. Add celery and saute for a minute.
3. Mix in the ground chicken, Do not disturb mixture until chicken is cooked, about 5 minutes. Stir to cook the rest of the groud chicken.
4. Mash in the chicken cubes then add water. Season with salt pepper and patis. Simmer for another 15 minutes. Turn off heat.

Pork Binagoongan with Eggplant










3 tbsps cooking oil
3 tbsps garlic, minced
1 cup onions,chopped
1 1/2 cups tomatoes , chopped
1 kilo pork liempo, sliced into inch cubes
1/4 kilo fresh salted alamang
               
    ( for bagoong )

1/2 cup water
2 whole eggplants, sliced 

  rock salt
  patis  
  a pinch  of sugar
2 pcs finger sili

Here is How :

1. Pour alamang into a bowl and add some water. Remove particles that float. Pour into a sieve and discharge liquid. Set aside.

2. In a pan heat cooking oil, saute garlic and onions together. Add tomatoes and continue cooking until tomatoes get mush, about 7-8 minuts

3. Add pork pieces and cook with tomato-onion mixture. when pork has firmed up, allow to simmer for another 5 minutes. 

4. Add the bagoong to the pork, Pour in 1/2 cup water, Bring to a boil. Cover and simmer for 45 minutes.

5. When pork is tender add eggplant slices and finger sili. Taste and adjust seasoning with rock salt or patis and a pinch of sugar.  Serve with rice.
